Hazelnut Chocolate Coconut Cookies
This is a brilliant recipe which I have borrowed from Cavegirl Cuisine
1/2 cup coconut flour
1 cup hazelnut flour (grind up hazelnuts in a food processor)
1 tsp baking powder
1/4 cup raw honey
3.5 ounces 70% dark chocolate, cut into chunks
1/4 cup unsweetened applesauce
1/4 cup unsweetened coconut flakes, toasted
Pre-heat oven to 350 degrees.
Blend all ingredients until honey is well-distributed.
Place small scoops of batter (about 2 tsp each) on a parchment-lined cookie sheet…leaving about 1-inch between cookies. Cook for approximately 10 minutes.
These cookies are crumbly when they first get out of the oven. Let them cool for about an 30 minutes to give them time to set.
