Paleo Chocolate Cake
- 100g unsalted butter
- 2 tbs of coconut powder for dusting
- 140g of dark chocolate with 70% plus of cocoa solids.
- 6 large eggs (separated)
- 3/4 cup of honey
- 140g almonds (chopped)
- 100g hazelnuts (chopped)
- One punnet of raspberries
- Creme fraiche to serve
Preheat your oven to 150C and grease a cake tin.
Melt the chocolate and butter in a bowl over hot water (bain marie)
Stir in the egg yolks and the nuts.
Whisk the egg whites in a separate bowl until soft peaks form then carefully fold into the rest of your mixture.
Pour into your cake tin and then cover with half the punnet of raspberries. Try and get them to sink into the mixture a little. I was a bit concerned they’d burn in the oven but they didn’t.
Bake for around 35 mins and until firm to the touch.
Wait for it to cool then dress it with the rest of the berries and dust it with the coconut powder.
